Cellar for up to 4 years. No need to decant before serving. Founded in 1998 by the legendary Peter Sisseck who created Dominio de Pingus, Quinta Sardonia has built a solid reputation for producing exquisite red wines which have much in common with those of the nearby wine region of Ribera del Duero. The estate is set on a high ridge overlooking the Duero valley below and benefits from plenty of sunshine during the ripening period along with cooler nights which help to retain freshness in the grapes. In total there are 20 hectares of vines which are all farmed biodynamically in harmony with the rhythms of nature. This charming bottling is primarily composed of Tempranillo along with very small amounts of Garnacha, Syrah, Malbec and Cabernet Sauvignon to add extra complexity to the finished wine. Following the fermentation the wine is aged in oak barrels for six months followed by another six months in cement tanks before bottling. The result is a silky smooth red wine that opens with inviting aromas of cherries, baking spice and dark chocolate. On the palate there is a soft mouthfeel and smooth texture along with ripe red fruit flavours and gentle tannins. This easy-drinking red is ideal to enjoy on its own with a group of friends or to accompany tapas dishes.
